The Anatomy of a Perfect Sarson da Saag

A winter ritual handed down through generations. Why this dish refuses to be hurried, and what kachi ghani mustard oil has to do with the patience it demands.

There is no shortcut to sarson da saag. Every Punjabi grandmother will tell you the same. You wash the leaves four times. You boil them with ginger and a pinch of salt for thirty minutes, no less. You let them rest. You hand-pound them until they look almost like a paste, but not quite. And only then do you bring the kadhai to the fire.

The dish has only six ingredients, but its character lives in the oil. Refined oils smooth the saag out. They flatten the edges of the mustard greens, the bathua, the spinach. Kachi ghani mustard oil does the opposite: it sharpens the dish, gives it a faint heat that runs through the makki di roti, the ghee on top, the chunk of jaggery on the side.

Why the oil matters

Heat a tablespoon of mustard oil until it just turns colour. The pungent note that rises off the pan is allyl isothiocyanate, the same compound that gives wasabi its bite. When you add ginger and garlic to that hot oil, the compound mellows into something rounder, deeper, almost meaty. This is the foundation. Get this wrong and the saag never recovers.

The recipe, simplified

  1. 11 kg mustard greens, 250 g bathua, 250 g spinach. Wash. Wash again. Wash twice more.
  2. 2Boil with 1 inch ginger and 4 cloves garlic for 30 minutes. Cool. Hand-pound or pulse briefly.
  3. 3Heat 4 tbsp Ashnoor kachi ghani oil until just smoking. Cool 30 seconds.
  4. 4Add chopped onion, ginger, garlic, green chillies. Sauté until golden.
  5. 5Add the saag, 2 tbsp makki ka atta, salt. Simmer for 25 minutes on low.
  6. 6Top with ghee, jaggery, raw onion. Serve with makki di roti.

Some of the best dishes are the ones that refuse to be rushed. Sarson da saag is one of them. The oil is just the beginning.
