Why Achar Needs Mustard Oil

Achar is not a side dish in Indian homes. It is a season preserved in a jar. Raw mango in May, lemon in winter, green chilli when the market is generous. Every family has a method, but across large parts of North and East India, the jar often ends with the same instruction: cover with mustard oil.

Why mustard oil works so well

The oil carries spice, coats the fruit or vegetable and creates the unmistakable aroma people associate with homemade achar. Its pungency stands up to salt, chilli, rai, methi and saunf. A neutral oil can cover the pickle. Mustard oil participates in it.

The jar rules

  1. 1Dry the ingredient fully before mixing. Water is the quickest way to spoil a pickle.
  2. 2Use clean, dry spoons and jars every time.
  3. 3Warm the oil gently if your family method calls for it, then cool before pouring.
  4. 4Keep the pickle covered with oil and shake the jar with clean hands or a dry spoon.

Achar teaches the same lesson as good oil making: patience is not decorative. It is the process.
